Brown sugar, like so many other things, is not immune to the effects of cold weather. When it gets cold outside and stays that way for a while, your brown sugar can end up looking like a rock and making you think that you’ve purchased the wrong kind of sugar altogether.

Luckily, there are some simple ways to soften up your hardened brown sugar before you throw it out or use it in culinary projects (which would be a shame).

— If you have a microwave:

If you have a microwave, place the brown sugar in an oven-safe bowl and heat on 50% power for 5 minutes.

Remove from the microwave and allow to cool for about 10 minutes. The sugar should be soft enough to use in your recipe!

— Place moistened brown sugar in a microwave-safe bowl, add a paper towel over the top, and nuke it at 50 percent power until it’s soft.

The sugar will be very hot but not burn you — just use caution! The sugar can also be softened in an oven by heating it at 300 degrees F for 30 minutes or so.
